How to store bamboo sticks in a commercial kitchen

How should bamboo skewers and sticks be stored?
Keep cartons sealed, off the floor and away from wet areas at normal room humidity. Bamboo below 12% moisture is stable indefinitely; the failure mode is absorbing moisture from a damp store, which causes surface mould on the outer sticks within weeks.
- Store sealed, off the floor, away from wash-down zones.
- Dry bamboo has no fixed expiry — humidity is the only enemy.
- Rotate stock first in, first out by carton.
- Discard any pack showing surface bloom rather than drying it out.
What actually spoils bamboo sticks?
Nothing in the bamboo itself. Surface mould appears only when ambient moisture is absorbed by an open pack in a humid store, typically beside a dishwasher or an unsealed monsoon-season godown.
How long does an unopened carton last?
Indefinitely under normal warehouse conditions. We date-stamp cartons so you can run first in, first out, but there is no chemical shelf life to expire.
What about opened packs on a service line?
Keep opened inner packs in a covered container on the line and take only a day's usage out at a time. That keeps them out of steam and splash without slowing service.
